    After purchasing our slice of paradise – a 100-acre farm just outside Nimbin, the hippie capital of Australia – we decided to do something different in agriculture. We threw out the rule book and started from scratch. We asked questions like what happens when you don’t roughhouse your animals? What’s a more nutritious way to feed cattle?     Behind healthy, happy animals are the farmers who care for them. At Nimbin Grass Fed Wagyu, Trent Paola is that guy. Trent’s been working in agriculture almost his whole life. After growing up on a farm outside Tamworth in northern New South Wales, Trent worked as a jackaroo on large cattle stations in central Australia, home to much of Australia’s world-renowned beef. He learned all about animal handling, from keeping animals calm to using more humane techniques to move cattle around. After studying agriculture at University of Western Sydney, Trent went on to a successful career in fruit imports and exports.

    Now Trent’s gone back to his roots, raising Australian wagyu and bringing along Scott Maddox, the man he learned the tricks of the trade from, to manage the farms. At Nimbin Grass Fed Wagyu, Scott and Trent put animals first. That means maintaining a schmick-looking farm day in, day out: rolling pastures, greener-than-green grass and natural spring water. It means no motorbikes to round up cattle. It means letting the animals be outside, where they’re supposed to be. And the results speak for themselves: juicy steaks, great marbling and an all-natural product you can feel confident buying.

Our cows at Nimbin Grass Fed Wagyu are part of the pioneering red- and black-wagyu cross-breeds that are renowned for their size. They also thrive on grass diets and can withstand hot, humid weather. In short, they’re perfect for Byron Bay. We treat our animals with care and respect because we believe you get out what you put in. Between Trent, Scott and our dedicated staff, your beef is in safe hands.

    You wouldn’t put any old thing into your body – you like to know where your food comes from and that it’s free of any nasties. We feel the same about our cows. Many farms choose to fatten their wagyu at feedlots, but we take the more natural approach of 100% grass-fed wagyu beef. While there’s plenty of green grass for our cows to munch on thanks to Byron Bay’s climate, the grass that grows here doesn’t contain enough protein to produce Australian wagyu that’s up to the standard our customers expect. To improve the diet of our animals, we came up with a totally unique feed that combines grains, seeds, mineral pellets and, in true Nimbin style, hemp.

    Yep, our cows really are “grass”-fed. We’re taking the byproducts that usually get tossed away when hemp products – clothes, skin care and food – are made, and we’re adding it to our special feed. Our cows could be the only ones who are eating the world’s latest superfood: hemp. If you want to try a truly unique cut of beef, Nimbin Grass Fed Wagyu is just the ticket.
